TRANSMETTRE LA PASSION
Directeur de la création et des ateliers de fabrication chez Lenôtre depuis treize ans, il est le maestro de la plus grande brigade de France, composée de plus de 450 chefs. Digne héritier de Gaston Lenôtre, Guy Krenzer perpétue le savoir-faire unique de la maison dans toute la diversité de ses expertises.

PARTAGER LE SAVOIR
Meilleur Apprenti de France, deux fois MOF, titulaire d’un diplôme des compagnons des devoirs Unis...Le travail en équipe, il ne connaît que ça. Il marie la bienveillance avec une exigence extrême, indispensable à la transmission des savoir-faire. Car l’apprentissage a toujours agi comme un moteur dans la maison fondée par Gaston Lenôtre en 1957.

CULTIVER LE PLAISIR
Gardien respecté d’une tradition gastronomique française basée sur la discipline et la précision dans le travail, c’est aussi un homme drôle et chaleureux qui vient travailler en Air Jordan. Il est aussi bon charcutier (MOF 1987) que cuisinier (MOF 1996), une pratique qu’il ne dissocie cependant pas de la pâtisserie. Et il ne cesse d’apprendre : sa fierté actuelle est d’être fraîchement diplômé barista et torréfacteur, à la suite d’une formation à la Caféothèque de Paris. Même arrivé au top niveau, Guy Krenzer reste un perpétuel apprenti, jeune et enthousiaste.
